somethin's fishy around here

It's our dinner! I found this recipe last week and loved it, so we get to have it again this week!

Oven-baked Mahi Mahi Sandwiches
You will need:
Nonstick cooking spray
4 frozen mahi mahi portions, thawed (we just did it with tilapia fillets and they were good)
1/2 cup all purpose flour
1/2 tsp sea salt
2 eggs
3/4 cup Italian-seasoned dry bread crumbs
2 tbsp butter, melted
4 hamburger buns or hoagie rolls
4 slices American Chesse
4 tbsp tartar sauce, or to taste*

Preheat oven to 375F. Coat a baking sheet with cooking spray. Pat dry thawed mahi mahi with paper towels. Combine flour and salt in shallow bowl. Beat eggs in second bowl. Place bread crumbs and melted butter in a third bowl and mix until blended. Dip the fish in the flour, turning to coat evenly; remove excess flour. Dip in the eggs, coating evenly. Dip in the buttered bread crumbs, turning to coat evenly. Press the crumbs into the fish, tapping off excess. Place fish on the baking sheet. Spray the fish generously with cooking spray. Bake for 18-22 minutes. Remove from oven. Preheat the broiler on high. Toast insides of hamburger buns until golden brown. Place a slice of cheese on each fish portion. Broil until the cheese melts. Serve on buns, top with tartar sauce. Enjoy!

Tartar Sauce* 
1 cup mayonnaise 
1tbsp sweet pickle relish
1tbsp minced onion
2 tbsp lemon juice (optional)
Salt & pepper to taste

In a small bowl, mix together mayonnaise, sweet pickle relish, and minced onion. Stir in lemon juice. Season to taste with salt and pepper. Refrigerate for at least 1 hour before serving.
